Equipment

  • Hand mixer
  • cookie scoop

Ingredients

  • 1/2 cup blanched almond flour
  • 1/2 cup dutch process cocoa powder
  • 1/4 cup sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 4 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1.5 servings Lily's milk chocolate baking chips semi-sweet, dark, caramel and white chocolate are options as well

Instructions

  • Preheat the oven to 350°F and melt butter to set aside to cool
  • Mix almond flour, dutch cocoa powder, sweetener, salt and baking powder
  • Mix cooled melted butter, egg and vanilla extract
  • Combine dry and wet ingredients then fold in chocolate chips. Allow to rest at least 15 minutes before scooping.
  • Using cookie scoop, scoop each cookie and place onto baking sheet about an inch apart to allow room for spreading. Then flatten
  • Bake in oven for 15 minutes checking the cookies for doneness because you won't see them browning of course. Allow cookies to rest. They will get harder the cooler they are. If you want to soften it up, just give it a pop in the microwave. When hot they are fragile.
