Meatloaf Recipe with Oatmeal

A classic-style meatloaf made with 85/15 ground beef, quick oats, buttermilk, sautéed onion and garlic, and a sweet ketchup glaze. The quick oats replace breadcrumbs and blend into the meatloaf for firm, juicy slices.

Equipment

Ingredients

  • 2 pound ground beef 85/15
  • 1 medium yellow onion diced
  • 4 cloves garlic minced or pressed
  • 1/4 cup parsley chopped
  • 1 teaspoon dried thyme
  • 3/4 cup quick oats
  • 1/2 cup buttermilk
  • 2 large eggs

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Topping

  • 3/4 cup ketchup
  • 1 tablespoon brown sugar light

Instructions

  • Cook the diced onion and garlic over medium to medium-high heat until softened with a little browning around the edges. Season lightly with salt and pepper. Stir in the parsley and thyme for about 10 seconds, then remove from the heat and allow the mixture to cool.
  • In a large bowl, combine the ground beef, quick oats, buttermilk, beaten eggs, seasonings, and cooled onion mixture. Mix just until evenly combined.
  • Cover and refrigerate the meatloaf mixture for about 30 minutes so the quick oats can absorb the buttermilk and moisture.
  • Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment so the meatloaf can be lifted out after baking.
  • Transfer the meat mixture to the loaf pan and gently press it into an even loaf. Bake for 45 minutes.
  • Mix the ketchup and brown sugar. Remove the meatloaf from the oven, check the internal temperature, and spread the glaze over the top.
  • Return the meatloaf to the oven and continue baking for about 20–30 minutes, checking with a meat thermometer, until the center reaches 160°F.
  • Let the meatloaf rest for 20 minutes before lifting it from the pan and slicing.

Notes

Quick oats are important for this version because the smaller pieces blend into the meatloaf as they hydrate and cook. Letting the mixture rest before baking gives the oats time to absorb the buttermilk and helps the finished loaf hold together when sliced.
