Marry me chicken tortellini pasta is a super easy recipe with juicy chicken in a creamy sauce with parmesan and sun dried tomatoes that's super addictive.
First, if the chicken breast are too thick then cut them thin personally. You do not want thick chicken for this recipe. Season the chicken with coarse salt and black pepper.
In a frying pan or sauce pan, add a little oil and sauté the chicken breast until they are golden and cooked all the way through. Do not pour a pool of oil in the pan to fry the chicken. Add more oil as needed but the oil should be just enough to cover the bottom of the pan.
Now, once the chicken is done lower the heat to a medium low and take the pan from the cooking eye. This will allow the pan to cool much quickly. Allow the pan to sit for about 3-5 minutes.
After the pan is no longer smoking there should be a little oil left in the pan from cooking the chicken. Toss in the minced garlic to see how hot the pan is. The garlic should gently cook and you can add it back on the eye. If the garlic browns in a few seconds the pan is still too hot and do not put it back on the eye yet.
While waiting for the pan to cool, boil the tortellini according to the package instructions.
Now, once the garlic has cooked about 30 seconds mix the flour with the oil left in the pan. Allow the flour to cook about 10 seconds before pouring in the milk.
Once you pour in the milk continue stirring until the milk start to steam and begins to thicken. If there are a few bubbles that is fine but you do not want it to boil. Once the milk is steam and beginning to thicken toss in chopped parmesan cheese, dried herbs and sun dried tomatoes.
Mix everything until the cheese has melted and everything is smooth. Now, lightly season the sauce with salt and pepper to taste but carefully because the sauce will be hot.
Lastly, the sauce is finished. Chop up the chicken and add the tortellini into the pasta. Serve with basil, more sun dried tomatoes and a little of freshly grated parmesan cheese.
