Keto no bake cookies are a healthy version of your favorite no bake cookies, yet still sweet and still delicious! Instead of oatmeal we use a mix of nuts, peanut butter or almond butter with coconut. Keto desserts are possible and can be great when staying sugar free!
In a small pot add in butter, nut butter, sweetener just to melt and combine together
Once combined remove from heat, add extract and then cocoa powder
Add in coconut and nuts
On parchment paper use a cookie scoop and scoop cookies out. Should be 6. See notes below for any issues.
Refriderate or freeze until set or hardened. Shouldn't take anymore than 20-30 minutes.

Helpful Recipe Tips
Creamy nut butter, you'll want a nut butter free of sugar but I suggest one with a little of oil in it to help with texture.
Batter runny, if you scoop and the cookie just spreads everywhere you may need to add more nuts or coconut to help bulk the mix.
Refrigerate?, this is a crazy idea but think rice crispy treats. You can put them in the fridge and they will harden quickly but they'll be hard. Or, you could leave them out and let time harden them to have them keep that nice chewy texture. But, if you're ready to eat right then go for it!
Sweetener matters! Liquid, granulated and powdered all make a difference. I prefer granulated or powdered often over liquid due to the concentrated flavors. The thing is, erythritol crystalizes when you heat it and it cools. What that does is make this cookie hard like brittle and have an "ashy" look to them.
