Hamburger Steak and Gravy

Juicy hamburger steaks seared until deeply browned, then finished in a smooth homemade brown gravy made with beef drippings, broth, and bouillon. Add sliced onions for an easy onion-gravy variation.

Ingredients

Hamburger Patties

  • 1.5 pound ground beef 85/15
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce

Gravy

  • 1/4 cup meat drippings
  • 3 tablespoon all-purpose flour
  • 2 cup beef broth
  • 1 beef bouillon cube

Optional

  • 1 medium yellow onion sliced
  • 1/4 cup heavy cream for a richer gravy

Instructions

  • Combine the ground beef, egg, Worcestershire sauce, salt, garlic powder, and black pepper just until mixed. Form into 5–6 hamburger steaks and refrigerate for about 30 minutes to help them hold together.
  • Heat a large skillet over medium-high heat. Sear the hamburger steaks for about 3–5 minutes per side, until deeply browned. They do not need to be cooked through. Transfer to a plate.
  • Leave about 1/4 cup of the beef drippings in the skillet, removing any excess. If the pan is too dry, add about 2 tablespoons of butter.
  • Reduce the heat to medium. Stir the flour into the drippings and cook until it begins to lightly brown.
  • Slowly pour in the beef broth while stirring. Crumble in the bouillon cube and bring the gravy to a gentle simmer until it begins to thicken.
  • Return the hamburger steaks to the skillet and reduce the heat to low. Simmer for about 10 minutes, spooning gravy over the tops as they finish cooking.
  • Remove from the heat and serve the hamburger steaks covered with the brown gravy.

Notes

For onion gravy, cook 1 sliced medium yellow onion in the drippings after removing the hamburger steaks. Once the onion softens and begins to brown around the edges, add the flour and continue with the gravy as directed. For a richer gravy, stir in 1/4 cup heavy cream after the hamburger steaks have cooked and you've turned off the heat.
