Ground turkey enchiladas are a great recipe that's super easy with a low fat protein source. All of the flavors everyone loves and perfect for weeknights.
First, prep all the ingredients. Dice the onion, mince the garlic and prep the canned ingredients as well.
Preheat the oven to 350℉.
Now, in a skillet you'll need to brown the ground turkey. Once the turkey is cooked remove from pan.
Next, add in the onion, garlic and green chilies, season with cumin. Cook until soft and fragrant.
Add back in the ground turkey but also add the beans and enchilada sauce in as well.
Mix everything for about 2 minutes so that it is hot. Lastly, add in a cup of shredded cheese. Taste for salt and pepper at this point before wrapping them.
In a 16x9 baking dish spread a little sauce across the bottom. Then, lay the tortillas as you make the flap-side down so they stay close. You can place them close together as well.
Lay out the flour tortillas then spoon in the filling. Not so much you can roll the tortilla up. It doesn't need to be perfect because you'll lay them flap-side down.
Pour the rest of the sauce across the tops of the tortillas. Then add cheese and place them into the oven. Allow them to bake 20 minutes or until cheese is melted then remove.
Lastly, allow to cool a it then serve.
