First, you need to sauté the veggies before making any meatloaf. Sauté in a frying pan with oil the onions, carrots, celery and garlic. Cook until they have reduced in sides and you have some of the brown bits on the veggies. Right before turning off the stove toss in the herbs and cook with the veggies for 30 seconds. Turn off the heat then allow to cool.
In a large bowl, add in the ground chicken, beaten egg, breadcrumbs, Worcestershire sauce, salt, pepper then toss in the cooled veggies. Mix everything until it's evenly combined but try to avoid over-mixing. Cover the bowl and allow to sit in the fridge for 20-30 minutes.
Preheat the oven to 350℉.
In a lined loaf pan for easy cleaning, add in the meatloaf and press it down into the pan. Cook for 45 minutes in the oven then add the topping. Allow the meatloaf to cook for another 15 minutes or until the chicken is fully cooked.
Lastly, allow the ground chicken meatloaf to cool then slice and serve.
