Ingredients

  • 1 pound chopped chicken
  • 1 apple, diced
  • 1/2 cup walnuts, chopped
  • salt & pepper to taste

Dressing

  • 1.5 cup Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon dill, chopped
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard

Instructions

  • First, you'll need shredded chicken. You can boil then shred your own or buy a rotisserie chicken and chop it up. But, you'll want to chop the chicken finely.
  • Next, in a small bowl mix together the dressing you'll use for the Greek yogurt chicken salad.
  • Slice the apple then dice up the pieces. A trick for oxidation is to allow the apple to sit in lemon water for about 15 minutes after dicing them.
  • Finely cop the fresh dill as well.
  • In a salad bowl, combine the chicken, apples, dill and walnuts. Then, pour the dressing over and mix everything completely evenly.
  • Lastly, season with salt and pepper to taste. Place the Greek yogurt chicken salad in the refrigerator for at least a few hours or serve the next day to give the ingredients time to come together.
