First, preheat the oven to its lowest temperature. You will use it to keep the steak warm while cooking the potatoes. You want the fats from the steak to cook the potatoes, this is why they come first.
Before starting, prep all the ingredients.
Season the steak with salt and pepper. Then, on a medium high heat sear the steak with a little oil until it reaches your preferred temperature. After, transfer the steak to a sheet pan and place in the warmed oven. Lower the heat for the pan to medium.
Add in the halved, seasoned (with salt & pepper) baby potatoes into the pan cut-side down. Put a lid on top and allow the potatoes to steam while they fry on the bottom. This allows them to cook through quicker.
Keep an eye on the potatoes to avoid burning but turn them when needed. After about 5-10 minutes the potatoes should be tender. Remove them from the pan and lower the heat to medium-low.
Add butter, minced or pressed garlic and thyme. Allow the butter to melt and bubble until it thickens and forms a sauce. When the sauce has thickened turn off the heat.
While melting the butter, add the steak back into the pan along with some potatoes and baste the ingredients with the garlic butter sauce.
Lastly, plate the ingredients and serve. Cover everything in the delicious garlic butter you just made.
