Ingredients

  • 2 pounds potatoes, sliced
  • 1/2 medium yellow onion, diced
  • 2 cups diced ham 16 ounces
  • 1 cup shredded cheddar cheese
  • 2 10 ounce cans of cream of mushroom
  • 1 tablespoon dried thyme
  • salt & pepper to taste

Instructions

  • First, wash and peel the skin from the potatoes. Then, sliced the potatoes into slices about 1/4 inch thick.
  • Now, place the sliced potatoes into the crockpot.
  • Dice the onion then add the onion, dried thyme and the cubed ham into the crockpot as well.
  • Now, add in the 2 cans of cream of mushroom. Mix the best way you can. It doesn't have to be perfect because as the potatoes cook down mixing will be super easy. The recipe will look as if more need to be added to the pot but as the potatoes cook down the water from them will mix into the sauce.
  • Place on high for 3.5-4 hours or low for 6-7 hours. I recommend high because you do need to stir once or twice during the cooking time to help the potatoes cook evenly.
  • Once the potatoes are softened add in the cheddar cheese and mix. The cheese will melt in about 5-10 minutes. Before serving salt and pepper to taste.
