Equipment

Ingredients

  • 1 pound lean ground beef
  • 8 ounces bacon chopped
  • 1/2 medium yellow onion diced
  • 1 medium green bell pepper diced
  • 2 28 oz baked beans
  • 1/2 cup barbecue sauce
  • 1/4 cup brown sugar
  • 2 tablespoon mustard

Instructions

Oven Mehtod

  • Preheat the oven to 350°F.
  • Add the ground beef to a large oven-safe pot and cook until browned. Remove the beef and drain any excess grease.
  • Add the chopped bacon to the pot and cook until crisp. Remove the bacon, leaving the rendered bacon fat in the pot.
  • Add the diced onion and green bell pepper. Cook until softened and fragrant.
  • Return the ground beef to the pot. Add the baked beans, barbecue sauce, brown sugar, and mustard, then stir until combined.
  • Stir in the bacon, or reserve some or all of it for serving if you prefer a crispier texture.
  • Bring the beans to a simmer, cover the pot, and transfer it to the oven.
  • Bake for 1 hour.
  • Remove from the oven, allow the beans to cool slightly, and top with any reserved crispy bacon before serving.

Slow Cooker Method

  • Brown the ground beef on the stovetop and drain any excess grease.
  • For the best texture, cook the chopped bacon separately until crisp and set it aside.
  • Add the ground beef, baked beans, onion, green bell pepper, barbecue sauce, brown sugar, and mustard to the slow cooker. Stir until combined.
  • Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  • Stir the beans, then add the crispy bacon just before serving.

Notes

  • Lean ground beef helps keep the beans from becoming overly greasy.
  • Use a baked bean flavor and barbecue sauce you already enjoy because both contribute heavily to the finished flavor.
  • For the oven version, the bacon can be baked with the beans or reserved until serving for more crunch.
  • For the slow cooker version, cooking the bacon separately and adding it at the end gives the best texture.
  • Allow the beans to cool slightly before serving.
