Preheat the oven to 400℉.
To start, season the chicken with salt and pepper. In a frying pan add a little oil and sear the chicken on a medium high heat. If all the chicken doesn’t easily fit into the pan, cook them separately. Crowding the pan can make them. You only want to get that brown coloring on both sides of the chicken. The goal is not to cook them all the way through.
Once all the chicken breasts have been browned, top them with the mozzarella cheese then place in the preheated oven. Allow them to finish cooking in the oven and allow the cheese to melt. Even a thick chicken breast should not take more than 20-25 minutes after sautéing, you don’t want to dry them out.
While the cheese is melting prep the topping.
Halve the cherry tomatoes then toss in a bowl with oil, chopped basil, garlic powder and olive oil. Then, add salt and pepper to taste.
When the chicken is done, and cheese melted, remove from the pan.
Plate the chicken then top with the seasoned tomatoes and drizzle balsamic glaze for serving, enjoy.
