Banana oatmeal muffins are a simple muffin recipe that's great for breakfast or any side dish. A moist texture from ripe bananas with the flavor of rolled oats and a touch of brown sugar.
In the bowl with the mashed bananas, mix in both sugars. Then add in the butter, vanilla extract and then the eggs. In another bowl, toss in the flour, cinnamon, baking soda and salt. Combine the dry and wet ingredients.
Fold in the rolled oats and then add the batter to the muffin liners in the pan. The batter will almost fill each muffin cup to the proper height.
