Ingredients
 

  • 2 sticks butter, softened (16 tablespoons)
  • 1.25 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 2 teaspoon vanilla
  • 1.5 cup all-purpose flour (191g)
  • 1.25 cup bread flour (159g)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1.5 cup apples, diced small
  • 1 cup walnuts, chopped

Instructions
 

  • To start, preheat the oven to 350℉.
  • In a bowl, cream the butter and the sugars together at a high speed for about 2-3 minutes. Then, add in the vanilla, egg and egg yolk. To the side in another bowl, add the flour, baking soda, baking powder, cinnamon and salt. Combine the dry and wet ingredients.
  • Now, chop the apples and walnuts then fold them into the dough. Take a large cookie scoop and scoop the dough onto a lined sheet pan.
  • Bake the cookies for 12-15 minutes depending on your oven. Allow them to cool a bit when they are finished before serving, enjoy.
