To start, preheat the oven to 350℉.
In a bowl, cream the butter and the sugars together at a high speed for about 2-3 minutes. Then, add in the vanilla, egg and egg yolk. To the side in another bowl, add the flour, baking soda, baking powder, cinnamon and salt. Combine the dry and wet ingredients.
Now, chop the apples and walnuts then fold them into the dough. Take a large cookie scoop and scoop the dough onto a lined sheet pan.
Bake the cookies for 12-15 minutes depending on your oven. Allow them to cool a bit when they are finished before serving, enjoy.
