To start, in a non-stick pan add in and sauté the onions. When the onions are almost done toss in the shredded and chopped chicken.
Next, pour in the taco seasoning, add water then allow the seasoning to thicken. After the seasoning has thickened add in cream cheese and shredded Mexican cheese. Once everything is combined, remove from the heat and set to the side.
Preheat the air fryer to 400℉.
While preheating, add a spoonful of the chicken mix into each tortilla then wrap them tightly. You are going to want to make them on the small side, you're not making burritos.
Place a row of the wrapped taquitos, flap side down so they won't come open into the air fryer. Cook for 12 minutes and flip halfway through. Note, if using flour tortillas you will not be able to cook them this long, adjust the cooking times.
Once finished, allow them to cool a bit before serving because the insides will be hot.
