To start, dice up the potatoes. The seasoning is for one pound of diced potatoes so double if you are making more.
Preheat the air fryer to 400F.
Now, while the air fryer is heating. Toss the diced potatoes in oil and the seasoning mix.
When the air fryer is up to temp, add the potatoes but do not crowd them. You may need to cook in batches depending on the size of your air fryer. The potatoes can be close but you should still be able to see a path that allows the air to travel around them for the crispiness.
Air fry for 10 minutes then give the bin a nice shake to move the potatoes around. Place them back and cook a remaining 10 minutes. Times will vary depending on the wattage of your air fryer.
Lastly, remove from the bin and serve. You may need to lets them cool a bit because the fluffy, potato inside will be really hot.
