the method in melting the chocolate is the same whether using the microwave or double boiler method
take half the chocolate and melt it. Just enough to melting not too much further than that to control temperature. A good rule is when most chocolate is melted just stir to finish melting the rest instead of keeping heat on it
Add in other half of chocolate and mix until remaining chocolate has melted
take half a teaspoon of chocolate and spoon into the bottom of cupcake liners or silicone muffin liners. Swirl around to coat the entire bottom. Place in freezer 2-3 minutes
Pull out and add cut out coconut butter into each liner. Or spoon coconut butter if you didn't use cookie cutter
add 1 teaspoon of chocolate on top of the coconut butter. That should cover it completely if you swirl it around or give it a little shake. If not enough simple add small amount until most if not all the coconut butter is covered.
Leave to set in cool place or place in refrigerator for 5-10 minutes then you can eat. Note that if you use cooler temperatures to harden the filling will get hard as well and give less of a flavor. Best flavor is at room temperature
