First, soak the beans in water according to the package instructions.
Now, when time to cook, prep all the ingredients before starting.
In a large pot for soup, cook the salted pork on a medium to medium-high heat. You want to sear it a little to release some of the fat, not cook it all the way through.
Next, when there is a rendered fat in the bottom, remove the pork and add in the diced onions, garlic, and tomatoes.
Cook them all until the onions change color and the garlic browns a little.
Now, add in the beans, ham seasoning packet, place the pork back in the pot and then pour in the chicken broth. For more liquid in the end of the recipe depending on personal preference, you’ll want to add about 2 more cups of broth or water.
Next, cover the pot and set the heat to low-medium. Occasionally return to stir the soup. The beans will need to cook at least an hour on low heat. The beans will be soft when finished cooking and squish easily.
Once done, add in a squeezed lemon and chili powder.
