Keto Banana Pudding

Having southern style keto banana pudding is an option when following a low carb, sugar free diet. To add, what if I told you I had vanilla wafers in every bite? That's exactly what you get in this simple and easy dessert recipe that will carb all your cravings of bananas!

Ingredients
 

  • 1 cup Heavy cream
  • 1/4 cup Unsweetened Almond Milk or water
  • 1.5 teaspoon banana extract ()
  • 1 teaspoon Vanilla extract
  • 1/2 cup graulated sweetener ()
  • 1/8 teaspoon Xanthan gum ()
  • 4 egg yolks
  • 1 tablespoon unsalted butter

Egg Whites

  • 4 egg whites
  • 2 tablespoon powdered sweetener
  • 1/2 tsp cream of tartar

Instructions
 

Banana pudding

  • Seperate egg yolks from whites and sit egg whites to the side if you plan to use them. Keep egg whites at room temp if keeping them.
  • Combine granulated sweetener and xanthan gum together
  • Add heavy cream and unsweetened almond milk into a small pot on the stove
  • Turn heat on medium low heat and whisk often. Allow a litte steam to form then add a TB to egg yolks to bring them up to temp. If you just toss them into the pot without doing this they will scramble
  • Give the egg yolks a good stir in the hot liqiud. Add one more TB and mix.
  • Now, place the pot back on the stove on a low heat. While whisking slowly pour egg yolks into pot with hot cream and almond milk.
  • Whisk until the custard thickens. Make sure the temp isn't too high to prevent it from burning at the bottom. It's done when you notice it bubbling a little.
  • After it has thickened turn off heat. Add in sweetener, xanthan gum mix. Then both extracts and butter
  • Next, transfer into a bowl but run it through a strainer when pouring it into the bowl. This will remove any potential lumps or any egg whites that may have came with the yolk.
  • Serve or cover and refriderate for 2 hours. To keep a "skin" from forming if you cover use saran wrap and have it touching the custard across the top to prevent that from forming.

Egg Whites

  • In the south we beat the egg whites until peaks form. Then place in the oven and you get that browned top you see in the photos. In order to do this proceed to the next step
  • In the bowl of egg whites add 2 TB of powdered sweetener. Using a hand mixer turn on high speed and start beating.
  • While beating sprinkle in 1/2 tsp cream of tartar. This helps with the egg white forming and keeping its shape.
  • After beating you can whip it across your banana pudding and cookies and place in the oven on broil until the top browns. Keep a close eye because it takes no more than 2-3 minutes for this to happen depending on how hot your broil is.

Notes

Helpful Recipe Tips

  • Heat is the enemy here, you're making a custard. Low and slow wins the race because too high of heat will result in the eggs scrambling.
  • Strain when finished, no one is perfect and it is hard to not get any egg white into your custard. When you transfer it from the pot strain it to get those tiny bits out.
  • Skip the xanthan gum, you can skip it but the custard will be slight thinner. The thickness comes from the eggs but the gum gives it more of a hold that you're use to.
