Enjoy a keto cucumber salad this spring at summer at cookouts, picnics or right at your dinner table. Enjoy this delicious, tangy salad dressing that is naturally low carb and sweetener naturally so free of added sugar.
3tablespoonketo granulated sweetener of choice or sugar(I used Lakanto)
1/2teaspoonsalt(salt to taste)
1/4teaspoonblack pepper(pepper to taste)
Slice cucumbers and red onion into 1/4 inch slices. You can peel or not peel cucumber based on personal preference
In a bowl combine all ingredients to make the salad dressing. Test, salt to taste and if you'd like to add more sweetener. You can use all sour cream or all greek yogurt if you are missing or want to avoid either of those ingredients.
Top the sliced cucumbers and onions with the dressing. Mix around to evenly combine. Serve or refridgerate for at least 30 minutes.
Helpful Recipe Tips
My salad is watery after a day, vinegar naturally draws the water out of anything. Cucumbers are primarily water so to fix this you can drain the excess water and remake the dressing. Or, you can add more sour cream and/or greek yogurt to thicken it back up.
Thickness of veggies, the thinner the more water will end of being released. It will still happen if they are thick but not as easy. 1/4 inch is a great size!
Add tomatoes, cucumber tomato salad is very popular and this recipe can easily be adapted.
How long does it last, you may get 3 days out of this recipe in the refrigerator. The cucumbers will start to wilt fast so 2-3 days is max.
