These shrimp stuffed mushrooms will shock the enitre family with how delicious and healthy they are. 1tablespoongrated parmesan cheese(sub for 1TB breadcrumbs)
1tablespoon unsalted butter
Clean mushrooms and remove mushroom stems. Discard stems I don't use those.
Flip clean mushrooms over, drizzle with oil and lightly season with salt and pepper. Allow them to sit in baking pan while you make the stuffing.
Preheat oven to 400°F
Chop up shrimp into small pieces before cooking, don't leave them whole.
On a high heat frying pan add oil then add shrimp and minced garlic. Season with salt and pepper and cook shrimp until pink then turn off heat. Drain excess oil
Add shrimp to a bowl then add cream cheese, mayo, lemon juice now taste to see if any salt and pepper is needed.
Microwave 1TB of butter and mix breadcrumbs, parmesan cheese and that melted butter together. You can skip the parmesan cheese and just add another tablespoon of breadcrumbs or vice versa. Note, only the breadcrumbs give a crispy crunch.
Spoon shrimp into each mushroom. Now take breadcrumb topping and sprinkle over each mushroom, some may be left. My pack had 9 so this will vary. Place in preheated oven for 20 minutes.Remove then allow to cool
Helpful Recipe Tips
Water will release from the mushrooms so don't be alarmed. This is why they look withered after they have softened.
Sub shrimp for crabmeat for a different experience with the recipe.
For keto, skip the breadcrumbs.
