Caramelized onions and mushrooms are the perfect side dish or topper. Mushrooms and onions are both healthy vegetables and when you add butter into the mix they become one of the tastiest combinations ever. Mix in a little fresh herbs in this great side dish option.
Turn frying pan on a high heat. Toss in mushrooms without any oil. Stir continuoisly because water will release and begin to evaporate from high heat. If you dont mix the mushrooms will begin to burn in the pan.
Once the majority of the water is gone lower the heat immedieatly and add olive oil.
Next add in sliced onion and season with salt and pepper. Continue stiring. Be mindful of heat if still sizzling lower heat. The pan show be on a lower simmer.
If mix is looking dry add more oil if needed. Add in red wine vinegar and sweetener now.
When the mix is almost caramelized all the way add in butter and parsley. Finish cooking then remove from heat.
Helpful Recipe Tips
Avoid chopping mushrooms or onions up too finely. What will happen is they will get mushy and you want to still have a bite to the vegetables.
Keep moisture in the pan. Throughout cooking the pan can start to look dry. When this happens don't add the butter in, add in a bit more olive oil.
Make sure you allow moisture to evaporate from the mushrooms before adding the oil or onions. If you leave a bunch of water in they won't sauté as well, they will steam more and the recipe will end up being more soupy than creamy in the end. See video below for assistance.
