Ingredients
 

  • 4 tablespoon unsalted butter
  • 2 cup beef broth (sub for chicken)
  • 2 tablespoon heavy cream
  • 1/4 teaspoon xanthan gum (see instructions )
  • 1/8 teaspoon xanthan gum (see instructions )

Gravy Seasoning Mix (skip if using a bouillon cube)

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • salt to taste

Instructions
 

  • In a small bowl mix 1/4 tsp and 1/8 tsp xanthan gum with gravy seasonings. A full 1/2 tsp is too much from my experience. If using a bouillion cube skip that and see notes below for thickening. Instructions for cube are at the end.
  • In a pot on medium high heat add in butter. Allow to melt then pour in beef or chicken stock
  • Once butter has melted all the way and broth is steaming turn off heat. There is no need to allow it to boil. Just make sure broth is hot enough for serving.
  • Add in heavy cream now. Then start whisking and slowly sprinkling in seasoning mix with xanthan gum. Take your time sprinkling to avoid lumps.
  • Once all is added keep mixing and give gravy a minute or two to thicken. You'll start to see it thickening quickly and it will thicken more as it cools.

  • Gravy with bouillion cube: Follow instructions but add cube in the place of the seasonings. You'll have to sprinkle xanthan gum by itself which heightens your chances of lumps if not careful. If you have meat drippings even better, yet you'll still have to sprinkle gum in. See video for help.

Notes

Troubleshooting Keto Gravy

  • Gravy is lumpy, when this happens you either weren't whisking or you put too much xanthan gum in at one time. You can fix this by running the gravy through a strainer and catch all those little pieces.
  • Gravy is too thin, this is very unlikely to happen but when it comes to personal preference it can. For those that like a super thick gravy just add more xanthan gum. Note, when you do this it won't be a smooth, thick gravy. It'll become thick and gummy-like in texture. When thickening sauces less is more.
  • Mixing xanthan gum with seasoning, this prevents the gum to clip together by being mixed with seasoning. You will still have to sprinkle slowly but this makes your chances of lumps almost to zero. If you are using a bullion cube with shake slowly or add gum to a sifter and slowly shake to let little granules out at a time while whisking.
  • Can I use a bullion cube, yes you can! Simply skip the seasoning and use that. When it comes to thickening follow the instructions in the bullet point above to avoid any clumping issues.
  • I have meat drippings how do I make gravy, that is even better. Use the instructions but skip adding the butter. A great example of this is in my keto chicken fried steak.
