Cucumber Feta Salad

Cucumber feta salad is so easy and simple to make. But, the vinegrette dressing is what takes it over the top to and it'll have you craving more!

Ingredients
 

  • 2 cucumber, peeled & diced
  • 1 cup feta cheese, crumbled

Dressing

  • 1/4 cup olive oil
  • 1 lemon, squeezed
  • 1 teaspoon apple cider vinegar
  • 4 sprig thyme
  • 1/4 cup basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • First, remove the skin the dice cucumbers into small quarters as in the video. Next, salt them heavy, cover then refrigerate for 1 hour. When the hour is up, drain and rinse off the excess salt. Then, lightly pat dry them and add them back into a large bowl.
  • While the cucumbers are getting ready make the dressing. Chop up basil and remove thyme from the stems. In a small bowl add in oil, squeezed lemon, apple cider vinegar, herbs with salt and black pepper. Mix well.
  • Now, when the cucumbers are ready add in the feta cheese then pour the dressing on top. Mix everything well and taste for salt. You shouldn't need to add more, please taste before adding.
  • Garnish with freshly cracked black pepper then serve.
