Doesn’t that sound like the perfect flavor for a sugar free ice cream? The Starbucks pink drink is amazing, but now it can be phenomenal!

Starbucks Pink Drink

From time to time, I had the worst habit of ordering hot drinks during hot weather. Why? Let’s just say I’m a special case!

Never did it fail me, in due time I’d be sweating bullets by my third sip! This day was different from all the others for one special reason…I’d got a cheat sheet! Something made me research Starbucks keto friendly options. Afterward lead me to the magnificent YouTube, where I’d watched a video from Keto Connect. Quickly I jumped to Pinterest!

Behold, all these options I’d missed out on! Where had I been? I’m not sure if it stood out due to the name, or the fact it was pink,  but Starbucks pink drink that day was the option I had chosen and I stuck my guns to it. After jotting down the list of ingredients, I hopped in my Honda Civic and headed for my nearest Target!

After a sip of my first Starbucks pink drink it was at this moment I knew sugar free is the perfect lifestyle for me. No! I’m joking, I’ve had so many of those moments I’ve lost count. Truthfully though, Starbucks pink drink is so good! Once the heavy cream hits that passion tea, the strongest scent of berries emerges making its way through your straw into your nose. When I say strawberry shortcake I mean it!

No Churn Ice Cream

Can I vent for a little? Just a paragraph or so?

I’m not a culinary whiz, and I don’t try to be. That’s a lie! Yes I do! Besides the point, no churn ice cream isn’t quality ice cream to me. All ice cream isn’t created equal, and it’d be a lie to say I’d take anything labeled ice cream! Some brands I simply don’t care for. Being low carb, keto has its hassles, in doing so there aren’t many low carb ice creams that taste great.

Don’t you dare say Halo Top!

Consequently, brands such as Halo Top and Enlightened work for our community. The catch 22 is only per serving, but who’s with me saying they knew this and still ate the entire pint? Hands up!

Back to the lecture at hand!

Ice cream is churned for good reason. Have you noticed how amazing freshly churned ice cream is? They sell it at the fair, I’m almost certain!

There’s no comparison! Sticking your ice cream in the freezer waiting for it to get hard is easy. By no means would I expect you to churn it by hand, it’s 2018 get an electric one!

Pour it in and sit down! That’s it!

As a result, people want no churn versions, so I made one. I won’t sell you a dream, Darius gives you straight facts the texture plays a bigger role in ice cream than you think. The no churn option will be included down below as well.

Why Eggs in Ice Cream?

Firstly, it’s the yolk not the entire egg. Yolks are a natural emulsifier. Xanthan gum and guar gum are also emulsifier, as a result all three of things bring things together. Notably, things like oil and water, oil and cream, two liquids who have a different density that’s not allowing them to mix together properly.

Whenever you find yourself in the grocery store take a look. Eggs, will always be an ingredient for any ice cream that isn’t vegan. Oh! And it’s churned!

Creamy Ice Cream

In case you didn’t know, I’m a cook in training. What I’ve found to be the creaminess is the fat in the milk of the ice cream. Something magical happens! The higher the fat the creamier the ice cream. No churners replicate this just fine until it enters the freezer. Certainly, all ice cream hardens in the freezer. It’s when they soften back up is where you tell the difference.

Especially, fresh soft serve, it takes a little room temperature heat and away it flows. Halo Top and Enlightened both are rock solid, so much there’s even a cute, little disclaimer for it. Please don’t chip your teeth and sue us!

Ingredients
 

  • 1 cup Heavy cream
  • 1 cup Unsweetened Almond Milk
  • 3/4 cup Passion Iced Tea (Starbucks uses this)
  • 1/2 cup Powdered sweetener (I used this)
  • 1/2 tsp Liquid stevia
  • 2 egg yolks Yolks only
  • 1/2 tsp Xanthan gum
  • 1/2 tsp Salt
  • 1-2 TB Vodka (NO CHURN ONLY (OPTIONAL))
  • 1 Ice cream machine (CHURN ONLY I used this one)

Instructions
 

No Churn instructions

  • In a small bowl separate egg yolks from whites. Keeping the egg yolks mix your xanthan gum, powdered sweetener, and salt with that. Set aside.
  • In a saucepan, pour in heavy cream, almond milk, stevia, passion iced tea
  • Put on a low heat, then add your egg yolk mixture you had sat to the side
  • Step heat up little by little but never passing midway. You want to heat the eggs slowly to create a custard.
  • Once custard is formed, a good way to know is it will coat the back of your spoon. Add in 1-2 TB of vodka which is optional and it'll help in the freezing.
  • After that any excess egg just pour through a strainer. In a covered container place strained mixture into freezer. Stir about every hour until you get the consistency you want. Or just leave it and let it do it's thing.

Churned Instructions

  • In a small bowl separate egg yolks from whites. Keeping the egg yolks mix your xanthan gum, powdered sweetener, and salt with that. Set aside.
  • In a saucepan, pour in heavy cream, almond milk, stevia, passion iced tea
  • Put on a low heat, then add your egg yolk mixture you had sat to the side
  • Step heat up little by little but never passing midway. You want to heat the eggs slowly to create a custard.
  • Once custard is formed, a good way to know is it will coat the back of your spoon.
  • Allow to cool a little. It's not a necessity. You can go and make the ice cream it may take longer to form that's all.
  • Pour mixture through strainer to remove any excess egg yolks that didn't cook into the custard. Start ice cream machine.
  • After ice cream reaches consistency you want turn off machine and enjoy. Place any excess in a covered container in freezer.

Notes

If you were to put any in the freezer for later the ice cream will harden. simply place on the counter for a little while in order for it to soften back up.
Servings based off 3 people. There is about 1.5 to 2 pints total once made.
