Cream cheese cookies are a real thing! When I first found out I knew I had to sign up. Personally cream cheese last no time with me. I can eat the stuff by the slice.

Being keto, cream cheese is something that is easy to fall in love with. Bloggers use it to flavor several recipes. Along with heavy cream and butter it’s one of the few dairy items we use to replace mill. In some ways that is. Due to the consistency that isn’t always possible of course.

Can you use cream cheese instead of butter in cookies?

Actually, that’s exactly what I did here for these keto cookies. So, in keto baking butter is love. It brings a wonderful flavor in any dessert really, keto or not.

You want to be mindful of the fat content. Cream cheese is thicker than butter so it will alter the end result of you cookies.

How to make coconut flour cookies:

First, you have to bring cream cheese and butter to room temperature. Cold cream cheese and butter doesn’t mix well at all. Keto cookies will be the death of your hand mixer.

I never mentioned these were coconut flour cookies as well. You want to mix all your dry ingredients together then stop. Maybe 30 minutes before you should have pulled your cream cheese and butter out of the fridge. The cream cheese should be room temperature now.

Cream together sour cream, butter and cream cheese. Toss in your liquid stevia and vanilla extract next. Hold off on the egg until last.

When making keto cookies that I don’t use melted ingredients I add the egg last. I like for the butter to really blend and mix in with the flours. Adding in the egg will break up the butter. The butter will still mix but not as well.

Combine dry and wet ingredients. Afterward add in egg. Lastly, using my double scoop keto cookie method place on a lined or sprayed cookie sheet. See below…

Baking at 300ºF for about 15 minutes allow the cookies to cool when finished.

Strawberries and sugar-free cream cheese icing

To make the strawberries and cream frosting is super easy. The remaining cream cheese will be used here to make the icing. Which means it’s already at room temperature.

Simply weigh your strawberries out first without the stem. I recommended a range because strawberries vary in size. Anything within that range will work just fine. Cut the strawberries up and give them a chop.

Blend the cream cheese and sour cream together with a hand mixer. Add in your powdered sweetener then lastly your strawberries. You want to use your hand mixer to blend the strawberries leaving some whole and puree others. This will give a nice contrast of flavor and texture.

Helpful recipe tips:

  • Room temperature ingredients, this is key to coconut flour cookies. Coconut flour likes to seize so to fight that having room temperature ingredients makes that a little harder.
  • Beef gelatin powder or gelatin? Beef gelatin I have never seen in the store. Yet, what we typically come across is gelatin that’s used to make jello. This gelatin can work as well but it does bake differently. Beef gelatin powder bakes down into the cookie. Allowing them to flatten by themselves and spread. Store bought gelatin does not. You will have to press the cream cheese cookies out. The texture is slightly different as well but not a huge difference. More chewy if anything with a tighter crumb.

Ingredients

  • 1/4 cup Coconut flour
  • 2 tablespoon whey protein isolate
  • 1/4 cup granulated sweetener
  • 2 teaspoon beef gelatin powder
  • 1/4 teaspoon Salt
  • 4 ounces Cream Cheese
  • 1 tablespoon Sour Cream
  • 3 tablespoon Unsalted Butter
  • 1 teaspoon Liquid stevia
  • 1 teaspoon Vanilla extract
  • 1 large Egg

  • 70-80 grams chopped up strawberries
  • 4 ounces Cream Cheese
  • 1 tablespoon Sour Cream
  • 2 tablespoon Powdered sweetener

Instructions

  • Bring cream cheese and butter to room temperature
  • Preheat oven to 300ºF
  • Using a hand mixer blend cream cheese, butter, sour cream, liquid stevia and vanilla extract. Do not add in egg yet.
  • Combine all dry ingredients. Coconut flour, whey protein isolate, granulated sweetener, beef gelatin powder and salt
  • Mix your dry and wet together. After combined well then toss in your egg and mix that in last.
  • Using my double scoop method (see video in post) scoop cookies on a baking sheet. You should get 12
  • Place in oven for 12-18 minutes. Checking at the 10 minutes mark. Watch for browning edges. They should be golden when done. Allow to cool

Strawberries and cream icing

  • Cut stem off strawberries and weight out to 70-80g. Then slice them up in small pieces
  • Use other half of cream cheese (4oz) and blend with sour cream and powdered sweetener
  • Toss in chopped strawberries and blend a little more. Allowing some of the strawberries to puree and others to stay in whole chunks for texture.
  • Serve on top of cooled cookies
